BLUE!

Blue! As in blue cheese. It stinks like old sweat socks, but tastes like heaven. Most refrigerators will have a random jar of old crusty blue cheese dressing hidden way in the back, and when you need it, you question "How do I know if it's good? Can it go moldy?" (The answer is yes...)

Make your own! You can do it in less than 10 minutes, and eat it right away, or let it site overnight and let the flavors develop. You most likely will not have leftovers... it's good on anything... like a spoon.

1 Cup crumbled Blue Cheese
1 Cup of milk
1 Cup of sour cream
2 tablespoons champagne vinegar ( or 1 tablespoon white vinegar)
1 tablespoon Worcestershire sauce
just a dash of granulated garlic (optional)
Salt and Pepper (to taste)

In a small bowl, combine about one quarter of the the blue cheese, buttermilk, yogurt, vinegar and Worcestershire sauce until smooth. Mash the cheese well to mix it in and really combine to get that flavor through the dressing.

Crumble the rest of the cheese well, and mix in.

Refrigerate in a covered bowl until ready to serve. This should keep for about 2 weeks if well covered.
