Food Cart White Sauce
Growing up in the NYC area, I was exposed to a LOT of different ethnic foods. One of my favorite was the Halal street carts... flame roasted meats or kabobs served on soft warmed pita, drizzled with that white sauce... excuse me while I wipe the drool off my chin.
Experimentation and adaptation of a few list of ingredients left me with this. It goes with everything, including a spoon. :)
1/2 cup real mayo
1/4 cup sour cream
1/2 cup plain Greek Yogurt
1 tablespoon white vinegar
1 teaspoon fresh squeezed lemon juice
1 teaspoon water
1 teaspoon fresh ground pepper (add 1/4 tsp more if from the jar)
1 teaspoon turbinado sugar
1/2 teaspoon dried dill
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
Mix the 4-11th ingredients in a medium bowl. Whisk until the sugar and salt are dissolved. Add the mayo, sour cream and yogurt, whisk until mixed well. Let sit for at least an hour in the fridge for the flavors to meld. Stir again, then store in an air tight container. I usually put mine right into a plastic squeeze bottle to use immediately.
This sauce can last up to about 5 days in the fridge. Make sure you shake/mix it well before use it each time as it will tend to separate after a day.
