Pancakes

 Very few things can beat the smell and taste of a warm stack of pancakes in the morning. Except bacon. Always Bacon... Mmmm... wut? Oops, I digress. That's another post. And meal.


 As of this writing, May 2021, literally millions of people have things growing in their fridge or kitchen counter after being stuck at home got almost 18 months. I'm talking about sourdough and kefir.

 Today I mixed some 'discard' sourdough (I collect the small amount each day) and some fresh kefir, and made some nice light and fluffy pancakes.

  1. 1 cup AP flour
  2. 1 cup sourdough discard
  3. 1 cup kefir
  4. 1 tbsp baking powder
  5. 2 tbsp sugar
  6. 1/2 tsp salt
  7. 1/2 cup milk
  8. 1 egg

In a medium bowl, whisk or sift together the flour, sugar, salt and baking powder.

In another bowl, whisk together the kefir, egg and milk. Then whisk in the sourdough.

Make a well in the dry ingredients, and pour the wet into the well. Quickly whisk all together, until combined, but not too much. The more you whisk and work the batter, the tougher it will get.

Because of the acid in the sourdough and kefir, it will react with the baking powder, and start to foam. This is what we want. You'll have nice foamy batter, which makes for light and springy pancakes.

Heat a pan over medium heat, melt a little butter into the pan, ladle in  the batter as you would any other pancake batter. Flip when ready... you know the drill.

This made 8 8-inch pancakes for me. A lot depends on how thick your batter was. These have a nice tang from the sourdough and kefir. My favorite so far...
